I know its a late post, but regarding eating your tamales dry, that is the only way I saw my family eat them. Only in "mexican" restaurants (and only on this side of the border) did chili sauce appear. we would often put a spoonful of homemade jalapeno salsa on top to spice it up, but that's it. Oh and we would make all kinds of tamales such as bean, chicken, pork, potato with pepper slice, and sweet one made with piloncillo and raisins.
