    I store mine edge down, but I also sharpen them every time before using.

    Great post. I'll bet most people store them incorrectly because it would seem safer to have the edge down.

    We have a horizontal slot knife block and love it. It came with our first set of "Real" Kitchen knives we purchased a few years ago, Zwilling JA Henckels – Four Star knives. They came super sharp and we keep them that way with a draw through sharpener. And hand wash and dry. Always.

    We never realized how much better life in the kitchen is with really, really sharp knives.
